Ingredients

  • 1 cup all-purpose flour
  • 3 cup granulated sugar
  • 1 teaspoon fine sea salt
  • 2 teaspoon baking powder
  • 1 cup vegetable oil
  • 1 large egg
  • 1 cup almond milk
  • 1 teaspoon vanilla extract
  • 8 ounce fresh blueberries
  • 2 teaspoon lemon zest

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.

  2. Line 10 standard-size muffin cups with paper liners.

  3. Whisk the flour, sugar, baking powder, and salt in a large bowl.

  4. In another bowl, whisk together oil, egg, milk, lemon zest, and vanilla extract.

  5. Combine the dry and wet ingredients. Do not over mix.

  6. Fold in the fresh blueberries.

  7. Divide the batter between muffin cups.

  8. Sprinkle a little sugar on top of each muffin

  9. Bake for 20 minutes.

  10. Transfer to a cooling rack.

  11. Serve as is or topped with your favorite cupcake frosting.
