Ingredients

  • 1 cup unsalted butter
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 3 cup cooking oats
  • 1/2 cup semi sweet chocolate chips
  • 1/2 cup bittersweet chocolate chips
  • 1/2 cup peanut butter
  • 1/2 cup toffee bits

Instructions

  1. Grease a 9 x 9-inch square pan.

  2. Melt butter in a large pan.

  3. Stir in the brown sugar and vanilla. Mix in the oats.

  4. Cook over low heat 2 to 3 minutes until well blended.

  5. Press half of the mixture into the bottom of the pan.

  6. In a small pan, melt the chocolate chips and the peanut butter on low heat until smooth, stirring often.

  7. Pour the mixture over the crust in the pan and spread evenly with an off -set spatula.

  8. Sprinkle the toffee bits next.

  9. Crumble and gently press the remaining oat mixture over the chocolate and toffee layer. 

  10. Cover and refrigerate 2-3 hours to firm up.

  11. Bring to room temperature then cut into bars.
