Super Easy Cannoli Bites

This no bake cannoli recipe will give you the classic taste of this Italian dessert, but you won't need to use any fancy baking techniques. These bite size treats will delight guests at your parties because they are small, tasty, and they look spectacular on a platter! No one would guess that you could make these precious treats in less than 30 minutes. If you don't like fruit, you can divide the ricotta filling into three parts before adding in the chocolate chips, pistachios, and candied fruit. Then guests will be free to choose which kinds they want. If you like all three flavors, feel free to combine them all as we did in our test kitchen. Either way, make sure to try out this easy dessert recipe for a taste of Italy. 

NotesNote: Baked filo cups shells are available in the freezer case at most supermarkets or specialty stores.

Ingredients

  • 2 packages pre-baked mini filo shells
  • 1 cup chocolate chips
  • 1/2 cup pistachios, finely chopped
  • __BLANK__
  • 12 ounce ricotta cheese
  • 1/2 cup powdered sugar
  • 1/8 teaspoon almond or vanilla extract
  • 1/4 cup mini chocolate chips
  • 1/4 cup candied fruit or candied cherries, finely chopped
  • 2 tablespoon pistachios, finely chopped

Instructions

  1. For the shells, melt chocolate chips and stir until smooth.  Place chopped pistachios into a small deep bowl. Dip the top edges of each filo cup into the chocolate and then into the nuts. Set on a bake sheet and then brush insides of the cups lightly with chocolate.  Let dry.
     

  2. While cups are drying, combine ricotta, powdered sugar, and flavoring.  Fold in chocolate chips, candied fruit, and pistachios into the cheese mixture. Spoon filling into the cups and chill until ready to serve.
