"Chocolate chunk cowboy cookies are so easy to make and packed with so much flavor! These cookies are loaded with chocolate chunks, coconut, pecans, and rolled oats. They are Texas-sized, soft and so chewy! In our family, we love cookies, especially when they are soft and chewy! That is why my family always turns to these delicious chocolate chunk cowboy cookies when we make cookies at home! They are loaded with so much flavor, freeze great, and we usually have everything on hand so that we can whip up a batch in minutes! Once you make these, they will become a new family favorite in no time."

Ingredients

  • 1 stick unsalted butter (melted)
  • 1 cup white granulated sugar
  • 1 cup light brown sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 1 cup unbleached flour
  • 1 teaspoon baking soda
  • 1 teaspoon table salt
  • 1 teaspoon cinnamon
  • 1 1 1/4 cup chocolate chunks + extra for garnishing (optional)
  • 1 cup unsweetened coconut
  • 1/3 cup chopped pecans
  • 1/4 cup rolled oats
  1. Preheat the oven to 300 degrees and line a baking sheet with parchment paper.

  2. Melt butter in 20 second increments in the microwave in a microwave safe bowl.

  3. Combine melted butter, white sugar and brown sugar together in a mixing bowl and mix well until smooth to remove all of the clumps.

  4. Add the egg and vanilla and mix well.

  5. Stir in flour, baking soda, salt, and cinnamon.

  6. Fold in chocolate chunks, coconut, and oats.

  7. Using a 3 tablespoon cookie scoop, create cookie dough balls and place them 2” apart on the prepared cookie sheet.

  8. Bake for 18-20 minutes or until the edges start to brown and the center is soft.

  9. Remove from the oven and add a few extra chocolate chunks on top of each cookie (optional).

  10. Let the cookies cool on the cookie sheet for 20-30 minutes for the center and chocolate to set or serve warm and gooey.
