  • 1 box carrot cake mix with pudding and the necessary ingredients per box instructions
  • 1 (14-ounce) can sweetened condensed milk
  • 1 (12-ounce) container frozen whipped topping, thawed
  • 8 ounces whipped cream cheese at room temperature
  • 2 tablespoons milk
  • 1 teaspoon vanilla

  • 1 cup coarsely chopped pecans

I haven't had carrot cake in years, and I never thought to make a poke carrot cake. This looks amazing and I know how wonderfully moist poke cakes are, so my family will love this!
