Cardamom Fig Jam

"This Cardamom Fig Jam is absolutely wonderful on toast or biscuits, on cheese plates or with blue cheese and ginger snaps. Enjoy! This Cardamom Fig Jam is actually very easy to make. You’ll need access to a bunch of ripe figs. Fresh figs are typically available in stores here in the US between August-October. Once you’ve got the figs, just trim off the stems and chop them into ½” pieces. Put those into a saucepan with the sugar and let the mixture sit for ~15 minutes. The sugar will soften the figs, and the figs will release some of their juices. Add in some lemon juice (to balance the sweetness), water and cardamom. Let the mixture simmer for ~40-45 minutes, and that’s it. You do need to stir it regularly (I usually stir it every 5 minutes) to keep the bottom from burning."
