Made with fresh chopped strawberries and filled with an irresistible cream cheese layer, these cookies are a real summer delight! These strawberry lemonade cookies are light and airy and pack a ton of summer flavor into one bite."

  • 1 cup Strawberries
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Granulated Sugar
  • 2 cups All Purpose Flour
  • 1 tablespoon Baking Powder
  • 1 teaspoon Salt
  • 1 cup Butter
  • 1 cup Granulate White Sugar
  • 1 cup Brown Sugar
  • 1 teaspoon Vanilla Extract
  • 1 Egg
  • 1 cup Cream Cheese
  • 3 tablespoons Powdered Sugar
  • Zest of 1 lemon
  1. Preheat oven to 350°. Line two large rimless baking sheets with parchment paper and spray with cooking spray.

  2. Prepare strawberries by mixing them with lemon juice and 1 tablespoon granulated sugar. Allow the mixture to sit for ten minutes, then drain off the liquid.
