Put on some rock 'n' roll and feel like a rockin' robin building its springtime nest.


  • 5 egg whites
  • 6 tablespoons sugar
  • 10 ounces sweetened coconut
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon vanilla
  • 1 pinch salt
  • Cadbury Mini Eggs


  1. In Saucepan combine egg whites, sugar and coconut flakes and cook over medium heat until combined. Stir frequently and add vanilla and almond extract. Let cook for about 12 minutes.

  2. Remove from heat and place a scoop in a mini muffin tin to create small nests. Bake at 300 degrees for 25 minutes until browned at the top and edges. Allow to cool. Remove and top with eggs.
