2 Ingredient Lemon Bars

Even a novice baker couldn't ruin 2 Ingredient Lemon Bars. This recipe for lemon bars is probably the easiest one you will ever find. As the recipe name hints, you only need two simple ingredients to make this delectable dessert. Better yet, since neither ingredient has any fat, the bars are also fat free. These treats are the perfect dessert for your next picnic or barbecue. Your friends and family won't believe you when you tell them how easy these are to make.

Ingredients

  • 1 box angel food cake mix
  • 2 (10-ounce) jars of lemon curd
  • Confectioner's sugar (optional)

Instructions

  1. Preheat oven to 350 degrees F. Line a 9 x 13-inch baking pan with parchment paper, leaving an overhand like a sling.

  2. Pour the cake mix into a large mixing bowl. Whisk in the lemon curd until combined with the cake mix.

  3. Evenly spread the batter into the pan.

  4. Bake for 35-40 minutes, until the cake is set and golden.

  5. Let cool before slicing. Sprinkle the confectioner's sugar over the lemon bars, if desired.

Where would I find the lemon curd in the store? Is this something that would be in the refrigerated section, or is this a box ingredient that would be on the shelf in the baking aisle somewhere? I love that your recipe only has two ingredients. It makes it hard to mess up doesn't it?

I'm always skeptical of recipes with 2 or 3 or 4 ingredients, but this looks legit to me! I can see how it would work.
