Ingredients

  • 15 ounces Lorna Doone shortbread cookies (about 1 ½ 10-ounce packages)
  • 6 tablespoons unsalted butter, melted
  • 4 ounces cream cheese at room temperature
  • 4 ounces Mascarpone cheese at room temperature
  • 1 cup confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 1 16-ounce container Cool Whip, divided
  • 2 (3.4-ounce) packages instant cheesecake pudding mix
  • 3 cups cold milk
  • 3 ½ cups sliced strawberries

Instructions

  1. In a food processor or a large plastic freezer bag, crush the cookies until you have fine crumbs.

  2. Place cookie crumbs in a large bowl and combine with the melted butter.

  3. Press evenly into a 9x13 inch baking pan. Place in the fridge to chill.

  4. In the bowl of a stand mixer, place the cream cheese and Mascarpone cheese, and mix until fluffy. Add the confectioners’ sugar, vanilla extract, and 1 cup of the Cool Whip, and beat until blended in.

  5. Evenly spread over the shortbread cookie layer.

  6. In a stand mixer, beat together the pudding mix and cold milk for 1-2 minutes. Add 1 cup of the Cool Whip and blend in. Spread over the cream cheese/mascarpone layer.

  7. Layer the sliced strawberries on top. Top with remaining Cool Whip.

  8. Chill for a few hours before serving.

This was absolutely delicious. The crust was crumbly and perfect, and the texture of the cheesecake, fruit, and whipped cream was outstanding. Yum.

This was a combination of all of my favorite things: strawberries, pudding, whipped cream, and graham crackers. I could easily picture myself making this on the weekend and not being able to stop myself from having way too much. Love it.

Cheesecake desserts can sometimes be way too rich, but this dessert was nice and light, and it wasn't too sweet either!

This was SO GOOD! That crust is delicious, and the filling is so sweet and creamy )
