  • 1 box carrot cake mix with pudding and the necessary ingredients per box instructions
  • 1 (14-ounce) can sweetened condensed milk
  • 1 (12-ounce) container frozen whipped topping, thawed

I haven't had carrot cake in years, and I never thought to make a poke carrot cake. This looks amazing and I know how wonderfully moist poke cakes are, so my family will love this! I found this recipe at just the right time with Easter, two birthdays and a graduation coming up soon in my family. I have lots of occasions to bake for and good excuses to make something yummy!
