Who knew that Italian Pignoli Cookies were so easy to make. They are a favorite in my family, but so expensive to buy in the Italian Pastry store. I used store bought Almond paste and it came out great. I was truly amazed at how wonderful these taste, and how easy they were to make. I love the author's suggestion for cooking times to make them softer or crisper. Great recipe. Definitely going into my Holiday cookie recipe file.
