Lemon Rosemary Cookies
"Sugar craving! Yes, I have them sometimes. It’s extremely rare, but it happened and these lemon rosemary cookies are simply delicious. If you know me, you know that I don’t really have a sweet tooth, I’m more of a salt and savoury kinda guy. But sometimes, a little sugar is the fix I need. Most of the time, sugar cravings for me come with a lemon craving, anything sweet with lemon, I will happily devour. These cookies are the perfect fix for me, they are easy to make, and as a bonus, I use my favourite herb, rosemary."

Ingredients
- 1 cup sugar
- 1 cup butter (room temperature)
- 2 eggs
- 1 tablespoon grated lemon peel
- 1 teaspoon finely chopped fresh rosemary
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt

Cream the butter with the sugar in a large bowl.

Mix in the eggs, lemon peel and rosemary.

In another bowl, sift the flour with the baking soda and salt.

Stir the dry ingredients into the wet ingredients.

Shape the dough into a 12 inch long log.

Wrap with a plastic film and refrigerate until firm (about 2 hours).
