"These Chocolate Peppermint Cake rolls are easy, quick, and delicious! Christmas calls for something a little fancier than a regular old slice of cake. Whip up a batch of these cake rolls and get ready for some holiday magic! Chocolate and peppermint and the perfect Christmas combination. You'll need mixing bowls, a food processor, measuring cups and spoons, a stand or hand mixer, a 10x15 baking sheet and a clean kitchen towel. The cake requires 5 eggs along with the other ingredients, and the frosting requires crushed peppermint candies. Yum! "

Ingredients

  • 5 egg yolks
  • 1 cup sifted powdered sugar
  • 1/4 cup sifted flour
  • 1/2 teaspoon salt
  • 3 tablespoons cocoa powder
  • 1 teaspoon vanilla
  • 5 egg whites (stiffly beaten)
  • 1/2 cup butter (unsalted, softened)
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 4 cup powdered sugar
  • 1/2 cup crushed red peppermint candies
  1. preheat oven to 375 degrees

  2. Beat the egg yolks until thick and lemon colored.

  3. Sift powdered sugar, flour, salt and cocoa together.

  4. Beat the dry ingredients into the egg yolks until well blended

  5. Add vanilla

  6. Fold in the egg whites.

  7. Spray a 10x15 cookie sheet (including the edge of the pan) with nonstick spray and line with parchment paper.

  8. Pour cake mixture in the baking pan and bake for 15-20 minutes, until the center springs back when pushed with a finger.

  9. Lightly dust a clean dish towel with powdered sugar. Loosen cake around edges with a knife and invert onto towel while still warm. Peel off parchment paper.

  10. Roll up the cake gently, rolling the towel in the cake as well.

  11. Wrap tightly in the towel to hold the shape.

  12. Once the cake has cooled, spread cream cheese frosting on the cake, sprinkle with the crushed candy and roll like a jelly roll.

  13. Peppermint Cream Cheese Frosting Recipe Combine butter and cream cheese into a mixing bowl and beat with a stand or hand mixer, until well-combined, creamy, and lump free.

  14. Add vanilla extract and salt and stir well.

  15. With a mixer on the low setting, gradually add powdered sugar until completely combined.
