The easiest shortbread cookies

"Classic shortbread made in the easiest way, flavoured with lemon and lime, and sprinkled with sugar. Butter shortbread fingers made with rice flour and melted butter, mixed with a spoon. This is the easiest recipe I've ever come across but amazingly it works and produces the best shortbread cookies I’ve ever had. Instead of rubbing cold butter into the sugar and flour mix, you stir it in with a spoon - magic! Sprinkle with sugar when still warm and best cut them while fresh."
