Lemon and blueberry work in perfect harmony to create Glazed Lemon Blueberry Cake, an incredibly easy cake recipe that you're sure to love. This easy dessert recipe uses cake mix, which means that there's little to no preparation time for this dessert. Simply mix the batter, pour it into a baking dish, and cover it with sweet, juicy blueberries. The whole cake is covered with a streusel-like topping and then, after it has finished baking, a simple and sweet homemade glaze. It's impossible not to like this cake.

Ingredients

  • 1 box lemon cake mix
  • 1/2 cup sour cream
  • 1/3 cup canola oil
  • 1/3 cup milk
  • 2 eggs
  • 1 1/2 cup frozen or fresh blueberries
  • 1 tablespoon all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 5 tablespoons butter, cut into small pieces
  • 1 cup powdered sugar
  • 2 to 3 tablespoons milk

Instructions

  1. Preheat oven to 350 degrees F.

  2. Grease 13x9 inch baking pan.

  3. In a mixing bowl, beat together cake mix, sour cream, oil, milk and eggs on low speed for 30 seconds. Increase speed to medium-high and beat for 2 minutes. Pour batter into prepared baking pan.

  4. Toss blue berries with one tablespoon of flour and sprinkle blueberries on top of batter.

  5. Combine brown sugar, granulated sugar, 1/3 cup flour and butter in a bowl. Work together with your fingers until mixture just starts to stick together. Sprinkle over blueberries.

  6. Bake for 35-45 minutes or until tester comes out clean. Remove from oven and cool for 30 minutes.

  7. To make the glaze, place powdered sugar in a bowl. Add one tablespoon of milk and stir. Add remaining milk in small amounts until glaze is of drizzling consistency.

  8. Drizzle glaze over cake.
