This quick and easy mug cake recipe is the ideal breakfast. It can be made in minutes, has just the right amount of sweetness, and makes a single serving. If you are craving a filling, comforting piece of coffee cake but don't want to spend time making an entire cake, this recipe is just what you need. This dessert for breakfast tastes great with a side of coffee. This recipe is also fun for kids because it is so easy to prepare. They'll love eating their own personal coffee cake in a mug.

Makes1 16-ounce mug cake

Preparation Time3 min

Cooking Time1 min

Cooking MethodMicrowave

  • 1 1/2 tablespoon butter
  • 2 1/2 tablespoons sugar
  • 2 tablespoons applesauce
  • 1/8 teaspoon vanilla extract
  • 1/4 cup self-rising flour
  • 1/4 teaspoon cinnamon
  • pinch of salt
  • 1 tablespoon butter
  • 2 tablespoons flour
  • 1 tablespoon brown sugar
  • 1/4 teaspoon cinnamon

  1. In a 16-ounce mug, soften butter. You can heat it in the microwave for 5-7 seconds if needed. Stir in sugar. Then add applesauce, self-rising flour, vanilla, and a small pinch of salt. Stir until just combined. The batter should be sticky, but not pourable.

  2. For the streusel, combine regular flour, brown sugar, and cinnamon in another small bowl. Cut in softened butter. When the mixture is the consistency of sand, sprinkle on top of cake batter.

  3. Microwave the mug cake for 45-75 seconds. Be careful not to over-cook the cake. We recommend microwaving it for 45 seconds, then checking the cake. It should look just set on top. If it still looks moist, microwave again, checking the cake at 10-second intervals. Once your mug cake is perfectly cooked, enjoy it while it's warm!

  1. Note that mug cakes will not brown on top like normal cakes, but will remain white. A finished mug cake will be solid but springy to the touch.

  2. We recommend using self-rising flour for mug cakes, because it will yield the best and most consistent results. However, if you don't have self-rising flour, you can add 1/8 teaspoon baking powder to the dry ingredients.

I love trying out new mug cake recipes! This recipe would be great to have on hand for dessert emergencies.

This just might be the best coffee cake I've ever had. Though it may not say so, I think one of the ingredients was magic. I can't wait to make this and share it with my friends.

This was so good! It was very moist, which is hard to do in a mug cake. The apple flavor was a little strong for me, so I might use a little less next time.
