  • 15 1/4 ounces Spice Cake Mix
  • 1 cup Pumpkin Puree
  • 1 Egg
  • 2 tablespoons Vegetable Oil
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Pumpkin Pie Spice
  • 4 cups Confectioners Sugar
  • 8 ounces Cream Cheese
  • 1 cup Butter
  • 1/8 teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • Cinnamon or Pumpkin Pie Spice
  1. In a large bowl, combine the cake mix, pumpkin puree, egg, oil, vanilla extract, and pumpkin pie spice. Mix until well incorporated. Cover the bowl with plastic wrap and chill in the refrigerator for 1 hour or longer.

  2. Remove the bowl from the refrigerator after the dough has chilled and preheat the oven to 350 degrees. Line a baking sheet with parchment paper. Drop the dough by the spoonful onto the sheet.
