What a creative recipe! I adore the choice of flavors that you picked. Do you use any lemon zest in this recipe? Also, do you pack the brown sugar tight when you measure it, or is this a loose measurement? I think I am stunned at the coconut. I am just so curious about how the peaches and coconut will taste together because that is a combination that I have never tried.
